De Nariz trabaja con parcelas singulares de Monastrell situadas en las cotas altas del Mediterráneo. Cada parcela tiene su propia orientación, suelo y microclima — personalidades distintas que se expresan por separado o convergen en una sola cuvée. De Nariz works with singular Monastrell parcels situated in the upper Mediterranean basin. Each parcel has its own orientation, soil and microclimate — distinct personalities expressed separately or converging into a single cuvée.

La meseta yeclana se extiende entre los 535 y los 800 metros, flanqueada por sierras que aíslan y castigan a partes iguales. El clima es continental sin concesiones: 300 milímetros de lluvia al año, más de 3.300 horas de sol y oscilaciones térmicas de hasta 20 grados entre el día y la noche. Sus suelos pardo-calizos — capa arenosa sobre subsuelo carbonatado, pobres en materia orgánica y muy permeables — niegan el agua y obligan a la raíz a ir lejos. Aquí la filoxera nunca llegó. Muchas cepas crecen sobre sus propias raíces desde hace décadas. The Yecla plateau extends between 535 and 800 metres, flanked by mountain ranges that isolate and punish in equal measure. The climate is continental without concession: 300 millimetres of rain per year, over 3,300 hours of sun and thermal swings of up to 20 degrees between day and night. Its brown-calcareous soils — sandy surface over a carbonate subsoil, low in organic matter and highly permeable — deny water and force the roots deep. Phylloxera never arrived here. Many vines have grown on their own roots for decades.

Entre 600 y 900 metros, Bullas es la denominación más alta de Murcia y la más fresca. La frescura no viene del mar — viene de la altitud. A cada cien metros ganados, las noches son más frías y el ciclo de maduración se alarga. Sus suelos pardo-calizos, con costra caliza en las laderas y sílex en los fondos de valle, reciben entre 300 y 450 milímetros de lluvia al año. La Monastrell aquí madura despacio, con más acidez y sin el quemado de la llanura. La misma variedad, un perfil diferente. Between 600 and 900 metres, Bullas is Murcia's highest denomination and its coolest. The freshness does not come from the sea — it comes from altitude. With every hundred metres gained, nights grow longer and colder. Its brown-calcareous soils, with a limestone crust on the slopes and flint deposits in the valley floors, drain well the around 300 millimetres of annual rainfall. Monastrell here ripens slowly, with more acidity and less heat stress than on the plain. The same variety, a different profile.

El DO Cava es el territorio del método tradicional español. Sobre suelos calizos y bajo un clima mediterráneo con influencia continental, la altitud conserva la acidez natural de la uva. Aquí la Monastrell tiene un papel diferente: no como protagonista del tinto, sino como la uva del sur que aporta cuerpo, color y carácter mediterráneo a un espumoso de crianza. Una traducción inesperada de la misma variedad. DO Cava is the territory of the traditional Spanish method. Our vineyards in the province of Tarragona, in the south of Catalonia, sit at altitude on calcareous limestone soils under a Mediterranean climate with a continental interior pull — conditions that preserve natural acidity in the base wine. Here Monastrell plays a different role: not the lead of a still wine, but the southern grape that brings body, colour and character to an aged sparkling. An unexpected translation of the same variety.
